Last week was a complete failure at cooking! I (horribly, irreversibly) screwed up TWO dinners. I don’t know what went wrong but getting back into the swing of cooking obviously got the best of me. [I have to give credit to my sweet husband who put on a brave face and kept eating, even though I had already spit mine out. BUT. We got to go out for frozen yogurt in lieu of dinner that night, so when I think about it, maybe I should screw up more often? ;)]
Here’s this week’s menu, and based on having already cooked Saturday and Sunday, I’d say we’re off to a good start already.
- white chili (I leave out the chicken, but it was one of our FAVORITE recipes when we used to add the chicken!)
- best -ever beet burgers, herb potato salad (we had a potluck Sunday dinner yesterday, and yes, beef burgers were also barbecued.)
- chipotle black bean, corn and rice bowls
- mexican tamale pie & green salad
- strawberry summer salad (I’ll post the recipe for this soon)
- eggplant lo-mein with roasted broccoli (we’re feeding this to the missionaries this week & it’s quickly becoming a favorite at our house. I leave out the basil at the end.)
- tofu summer rolls with peanut dipping sauce (from Sprouted Kitchen cookbook, page 190)
- zucchini pancakes with chive sour cream
- chocolate cake with chocolate ganache (okay – it’s technically not a MEAL, but it could be in an emergency, right?)
When I get back to the bay area I’m coming over to your house for dinner. kthnxbai
