It’s belated, but since most people think of buffalo hot wings, jalapeno poppers, and nacho cheese dip for Superbowl Sunday, I thought I’d share what we ate for the Superbowl this year.
It was a big year for the Bay area. The Giants went to (and won!) the World Series, and the Niners made it (and lost) to the Ravens in the Superbowl. How often does a city get to play in two national championship games?! So Tyler busted out his childhood 49ers blanket and we invited our friends over for a party.
On our homemade vegan menu were garlic knots, stuffed potatoes with avocado salsa, and a cashew cheeze dip for munching with carrots and celery. The Williams’ brought drinks and dessert (also vegan, especially for Jack since he’s got a dairy intolerance like I do). Everyone loved it because between our two small families, there were no leftovers. ;)
I started making the dough from scratch for the garlic knots when we got home from church around 12:30, and completed everything by 2:30 in time for the Superbowl. With good time management, it really didn’t take me long to make such a large amount of food. The garlic knots were my weakness – I just kept popping them into my mouth!
