With cravings, I usually try to give it a day or so. If it subsides, great. If not, I indulge!
So when these buttery, powdered-sugar coated snowballs drifted into my thoughts yesterday afternoon, I found myself coming up with excuses why not to make them. But when I woke up still tasting them on my tongue, I decided it was good idea to actually bake them. At least I halfed the recipe, right?
I’ll share my original recipe, along with how I made it vegan. This is a great recipe for kids to help, as the ingredient list is small and it doesn’t require a mixer.
Snowball Cookies
(makes 3 dozen )
3/4 c. butter, softened (I used EarthBalance)
1/2 c. sugar
1 egg (I used a “flax egg”: combine 1 T. ground flax + 3 T water, let sit for five minutes until it becomes gelatinous)
2 t. vanilla extract
2 c. flour
1/2 t. salt
1 c. chopped nuts
powdered sugar
Cream butter and sugar. Mix in egg and vanilla. Combine flour and salt, stir into creamed mixture. Fold in the chopped nuts. Roll into balls and bake at 350-degrees for 15 minutes. Cool slightly and roll in powdered sugar.
