Guys, I confess with this one I licked the bowl. But it’s okay to lick the bowl if it’s only vegetables, right? :)
Here’s my revised version of Oh She Glows Butternut Squash mac n’ cheese. I almost completely omitted the nutritional yeast and it is so much better! Nutritional yeast might be really healthy for you, but it sure takes some time getting used to. I had almost completely sworn it off forever, but almost two months later I’m slowly getting more used to it.

- Either completely omit the nutritional yeast, or start with 1 tablespoon at a time. The recipe calls for 6, but 1 was enough for my taste buds.
- I didn’t salt and pepper the butternut squash as I roasted it. I just seasoned my final “cheese” product as needed, because it was already quite salty.
- I didn’t think I’d like the texture of a lettuce-y vegetable mixed into my noodles, so I mixed in green beans, carrots, corn and peas instead. But I totally think you could leave it out!
We LOVE This! Work your way up to more nutritional yeast, you’ll get used to it and it’s a nutrient dense food. I don’t like the luttucey feel either, so we we did peas with a big salad on the side.
