Isn’t that fun to say? Pepitas!
I recently discovered the foreign and exciting world of pepitas. (But really it’s just a glorified spanish word for pumpkin seeds.) The ones I bought and smaller and much greener than what comes out of your typical Halloween pumpkin. Reading up on them, I found they are very nutritious (lots of iron!) and I think they taste good, too. Sweet and nutty flavored.
I love to eat them for lunch in my couscous salad. They pair extremely well with the dried cranberries, lemon juice, and walnuts.
Today was the first day it has actually felt like fall. I’m bundled up in a sweater, and the sky outside is a foggy grey. I haven’t lived here in the fall for over five years, so it’s interesting to adjust to the “lack” of seasons again. It’s a love/hate relationship for me. I hate that there are no beautiful, golden fall leaves, but I love the satisfaction of knowing there will never be any snow. Ever. :)
Oh!!! I wish I had that satisfaction!!! I love fall, but thinking about winter makes me want to cry. Totally jealous!!!
