I work with Tammy Ginos and my husband bought Dr Esselstyn&#039;s book &quot;Prevent and Reverse Heart Disease&quot;  We too went vegan for 3 weeks and didn&#039;t find it too hard.  3 more weeks later we are part time (M-F)vegetarians.  The point is that I love your menu ideas.  I can not find MENUs for vegitarians.  I even emailed a menu request to Dr Essy&#039;s nutritionist on web site and just got a list of cook books.  Ihave 50 years of knowing what to do the next day with left over chicken and how to buy supplies for a week of meals.  I am totally lost in this new mind set.  Thanks for the crutch to use.]]></description>
